Stuffed Green Peppers

Leftovers, what do you do with your leftovers? We took some leftover Michigan Sauce and some leftover Fra Diavolo and we made Dirty Rice and then stuffed some green peppers with it, it was easy, it was DELICIOUS.

Here’s how we did it!

Stuffed Peppers or Dirty Rice

If you don’t have peppers, just make Dirty Rice. We had about 3/4 lb leftover Michigan Sauce (that’s with the hamburger cooked in) and about 1/2 jar (12 oz) or small jar of Fra Diavolo.

3/4-1 lb Michigan Sauce (leftovers, with hamburger meat)
12 oz or so of Fra Diavolo (spicy marinara would work too)
1 lb ground Andouille sausage or hot Italian sausage
1.5 cups of rice (uncooked)
3 tsp butter
1 large yellow onion, diced (if using spicy marinara, omit the onion)
10 mushrooms, cut into large chunks (optional)
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
Chardonnay (Editor’s note: some for you, some for the recipe and some for the Cook!!)
salt & pepper to taste

Cook the rice (following the package instructions), add 1 tsp butter, pinch of salt, when done, set aside. Saute in 2 tsp butter, onion (if applicable) and mushrooms, add a splash of Chardonnay (1/4 cup), once mushrooms are cooked and onions are translucent, add your uncooked sausage and saute until done. Add your leftover Mama’s Sauces – Michigan and FraDiavolo. Stir well. Add a splash of Chardonnay (1/4 cup).

Cook until done, about 15 minutes. Add your cooked rice (that you set aside earlier and stir the ingredients well)

Cut your peppers in half, remove seeds and stem. stuff the peppers, top them with some grated cheddar & mozzarella cheeses and bake for 350 degrees for 20 minutes. Freeze extras and then reheat for lunch or dinner another day.
