Port Fig Demi Glaze

1 cup dried figs sliced
1 small shallot sliced
Small bunch of fresh thyme
4 tbls Vegan Butter
1 tbls olive oil
1 bottle tawny port
2 jars currant jelly
Saute the first five ingredients on medium heat until shallot is translucent.  Add port wine and currant jelly, stirring gently until jelly is melted. Reduce by the mixture by one-half and remove sprigs of thyme. Ready to serve!
